The Perfect Party Fried Rice

Hand me a plate of fried rice and it’s so certain that there’s a party around the corner even if it’s only going to be in my mouth.

Fried rice is a dish that has its origin from the ancient Chinese dynasty so technically that makes it a continental meal. However, in Nigeria just like we have party Jollof rice we definitely have party fried rice too.

My party fried rice tastes even better than jollof rice.

Its certainly not easy to make great fried rice every single time especially when making ti in bulk. The secrets to great fried rice is in the

INGREDIENTS

·         Cooked Rice

·         3tbsps Vegetable oil

·         1 handful shrimps or prawns

·         1 tbsp Ginger and Garlic paste

·         Onions

·         Crushed Scotch Bonnet peppers

·         Curry powder

·         Thyme

·         Coriander

·         Black pepper

·         Chicken stock cubes

·         Carrots

·         Green beans

·         Peas

·         Spring onions

·         Salt to taste

DIRECTIONS

Heat vegetable oil in a wok, pan or pot. Fry shrimps and then take it out of the oil.

Add onions to heated oil, add crushed scotch bonnet peppers(attarugu), add curry powderthyme, dried coriander and black pepper

Add chicken stock cubes with little water or if you have chicken stock you can also use that.

Steam carrot, green beans, peas in water.

Strain and then add steamed vegetables stir fry for a few seconds

Add cooked rice

Stir fry again

Add precooked vegetables

Put shrimps back in the add spring onion leaves in as a final touch to garnish.\

Taste to check for salt(optional)

Your fried rice is ready!
