THE BEST COCONUT FLAT CAKE RECIPE (No Butter+Portion Size Guide)-Jamila's Kitchen Diaries


This has to be the best coconut cake I've ever had! I made this flat cake with all things coconutey infused. It's a nice recipe that can easily be enjoyed with your afternoon tea, with family at dinnertime and would be a total crowd pleaser at events and gatherings. It's super moist and would leave you feeling incredibly satisfied thanks to the rich coconut flavour. I didn't even have to use butter. Here's the recipe below :


PREP TIME: 10 minutes

COOK TIME: 30minutes

TOTAL TIME: 40minutes



  • 2 cups flour 
  • 1/4 tsp salt
  • 2 tsps baking powder 
  • 1/3 cup coconut oil 
  • 3 eggs
  • 1cup sugar 
  • 1/3 cup coconut milk 
  • 1 tsp coconut flavour 
  • 1/2 cup shredded coconut 


  • Whipped cream 
  • Sweetened Coconut Shavings (Parade) 
  • Cherries 


  •  Preheat oven to 350°F(177°C) 
  • Sift all dry ingredients(flour,salt and baking powder)  together in a bowl and keep aside.
  • In another bowl, pour wet ingredients (coconut oil, eggs, coconut milk, flavor) and sugar and whisk together. 
  • Add dry ingredients to whisked mixture, combining with a spatula to form batter.
  • Fold in shredded coconut into batter mixture.
  • Pour batter in a cake pan
  • Place in your preheated oven and leave cake to set in preheated oven for about 5 minutes. Make sure your oven door stays closed throughout the 5 minutes.
  • Bake for 20-30mins or until a wooden pick (toothpick) inserted at the center of your cake comes out clean.
  • Take your cake pan out of the oven,  place on a rack and allow to cool for 5minutes.
  • Turn cake out of the pan gently. 
  • Once your cake is cooled
  • Frost with whipped cream
  • Top with shredded coconut shavings all around place and 8 cherries placed as seen in photo 

There,  you have the perfect coconut flat cake to enjoy with friends, family and even alone. Just make sure you don't eat it all in one go.

One slice with a cherry on top is suitable.  Here's how and why:



Portion Control Guide 

One great tip to achieving portion control when eating cakes is to portion it out before eating. That doesn't necessarily mean cutting up your cake as soon as its out of the oven. There are portion control cakes but you can also design your frosting or toppings in a way that would remind you to keep to a healthy portion size.

The cherry toppings on the coconut flat cake serve as a guide to the number of slices you can take off the cake. 

Have just one slice with a cherry on top and you don't have to worry about excess calories or eating too much cake. I used  7 cherries as additional toppings on my Coconut Flat Cake and that means 7 slices in total for 7 different people or one slice per person in a meal sitting.

So if you find yourself reaching for another slice or cutting up the cake two cherry toppings wide know that you are exceeding your appropriate portion size. Observing proper portion control is key to eating your cake and having it without worrying about excess calories, fluctuating sugars levels and weight gain.
