THE PERFECT MOIST OVEN BAKED MOI-MOI


The next time you get asked if Nigeria has any original dish that pretty much every Nigerian takes, I hope you'd be screaming out "moi-moi"!

Moi-moi is a classic Nigerian meal that cuts across every tribe, state and ethnic group in the country.

 In every home and amongst a group of friends, moi-moi is definitely a crowd favorite that is loved and can be taken in a variety of ways. Alot of people take it as a staple food at breakfast with beverages like kunu, pap or custard or as an accompaniment for lunch with a variety of rice dishes like jollof rice, fried rice and even white rice and stew. There are so many ways that Nigerians eat moi moi including taking it with bread as a "snack"

Now do you see why Moi-moi could totally be the National meal that everyone takes on special days like Independence Day or New years Day?

In case you're not convinced yet here's the recipe for my oven baked moi-moi baked in a casserole dish.

RECIPE

PREP TIME: 45mins

COOK TIME: 50mins

TOTAL TIME: 1hr 35 mins

SERVES: 8 people

INGREDIENTS

  • 2 cups Beans 
  • 4 red bell peppers (Tattasai)
  • 3 red hot chilli peppers( Attarugu )
  • 1 medium Onion
  • 3 cloves Garlic 
  • 1/2 cup Vegetable oil 
  • 2 tablets Maggi Crayfish 
  • 3 sliced Boiled eggs 
  • 1 can Sardine 
  • Bell peppers sliced (for garnishing)
  • Salt to taste

 

 

 

DIRECTIONS

  • Soak, peel and wash beans (soaking should be for about 20- 30mins)
  • Blend all vegetables including beans and pour into a mixing bowl 
  • Add in vegetable oil ,maggi crayfish tablets, salt , boiled eggs and sardine.
  • Oil a baking or casserole dish lightly and turn out the paste into the oiled dish. 
  • Garnish with sliced eggs and bell peppers.
  •  Cover with foil paper and Bake in preheated oven at 200°C for 50 minutes or until top is set.
  • Slice and serve warm with Kunu or pap.

 

I made my oven baked moi-moi in a casserole dish , it was so moist and I could already see it fitting perfectly in the middle of the table at a family gathering to celebrate the holidays. This moi-moi recipe is so good you can't afford to have it all alone so feel free to share with a friend or two.
