I created this recipe with love.

Accha is a whole-grain that is commonly grown in the Northern region of Nigeria. It is an ancient grain that is loved by many due to its nutty flavour and satisfying taste. There is just something about the taste of accha that is so soothing you can only experience it and testify.

Trust me if you're in a bad mood try having accha and it would leave you feeling all good on the inside.

Accha also has numerous nutritional benefits it is rich in antioxidants, vitamins and minerals some of which research has proven to be beneficial to people with diabetes. It is also a good detox food, does not contain gluten (which is good for people with celiac disease )and aids in weight loss. 

A lot of  Northerners take acha as a breakfast cereal similar to oatmeal made with just milk and sugar or in the form of tuwo(swallow) to be taken with the various traditional soups.

I've been craving accha a lot recently and I had just gotten some fresh produce so it felt like the perfect plan to make a whole grain salad.

I dont know the genius that first came up with the idea of adding grain to a regular salad but that person definitely deserves an award. This salad recipe is packed full with nutrients.Grain salads are heart healthy superfoods.

Here's the accha salad recipe i created that would leave you feeling like theres an awesome party going on in your mouth.


PREP TIME: 30 minutes

COOK TIME: 30 minutes



  • 1 cup Accha 
  • 1 cup of chicken stock 
  • 1 cup chopped parsley 
  • 1/2 cup of mint leaves 
  • 1 Bell pepper chopped 
  • 2 tomatoes diced
  • Pomegranate seeds 
  • Seedless mandarin orange wedges 


  • Wash Accha thoroughly to remove any sand particles.(see easy washing technique below)
  • Allow the chicken stock to come to a boil then add washed Accha.
  •  Cook acha in chicken stock until done and stock dries up.
  •  Turn out cooked Accha onto a wide plate and spread using a fork.
  •  Fluff and allow to cool completely.
  •  Meanwhile, prepare the rest of the salad ingredients. 
  • Combine all of the vegetables in a bowl and gently toss in the Accha until well combined. Serve with your favorite vinaigrette dressing 



Due to the tiny nature of Accha grain most farm threshing methods are not very efficient this usually results in having a lot of sand amongst Accha grain being sold in markets. Here's an easy way to wash your accha grains before preparation.

Wash Accha thoroughly using 2 bowls to remove sand particles by decanting the grains gradually into a second bowl until the bottom sandy layer is left.

Discard the sandy part.

Proceed to use your washed accha grains as seen in thr recipe above.
