An easy recipe of gourmet quality. This potato dish is a delectable meal that is sure to leave you wanting more. It contains tuna, stir-fry veggies and is highly nutritious.

Its potato season guys! If you’re as much of a foodie as I am, you must have noticed how potatoes are literally all over the market and even on the streets with the ever determined street hawkers, pushing their merchandise for sale.


There’s really no reason why you shouldn’t include a nice new potato recipe into your daily meals. 

This recipe will leave you wanting to have potatoes for dinner or lunch every other time you happen to see potatoes at the market. Go on. Buy your potatoes already and let’s get on with the recipe. This recipe has been made even better with the addition of the new Maggi Signature spice with the “dzoin” taste. I used the signature pottage spice. 


Prep time: 10 mins

Cooking time: 30mins


In this recipe you will need: 

10 medium sized (or 1 meduim bowl)potatoes 

1medium bulb of onion (sliced)

2tbsp of vegetable oil

1 Spring onion

2 satchets of Maggi Signature pottage spice 

1/8 cup of garlic.(crushed)

2 meduim carrots chopped

1/8 cup grated ginger

1/4 cup chopped green beans

Mixed bell peppers (chopped as desired)

1/2 cup Canned tuna or smoked fish

3 cubes of maggi star(the classic cube) 


Peel , rinse and cut up potatoes in halves

Parboil potatoes with a pinch of salt and then strain parboiled potatoes.

Cut all vegetables according to your preferred shape/size.

Place your non-stick pot with vegetable oil over low heat.

Saute onions and garlic

Add in chopped vegetables, season with maggi cubes and stir fry 

Add in parboiled potatoes gentle and leave to sizzle for about 5minutes.

Add in canned tuna or smoked fish and leave to steam for 1-2 minutes

Toss gently to prevent tuna pieces from breaking in the mixture and cook uncovered on high heat 

Sprinkle your maggi signature pottage spice into the entire mixture

At this point you can either place the mixuture in a casserole dish and put in the oven to bake for a few minutes or if you don't have an oven reduce to low heat cover the pan and leave to cook for 2mins. Serve hot!


This recipe is suitable for a 2000kcal/day diet.

It contains low-fat, medium carbs, moderate protein and low salt.

1  cup makes a serving.  


Make sure all the veggies are cut up before you begin cooking to ensure that you work very quickly to prevent the vegetables from becoming too limp over high heat
