Kwadon Zogale (Moringha Salad)

Kwadon Zogale or Moringha salad is a simple salad taken in Northern Nigeria. It can be eaten as a cold starter or as a side to rice dishes. I especially love the nutty flavor of the kuli-kuli mix.

With the many health benefits of Moringha, this one is worth trying at home.


Ingredients

  • 3 cups of Zogale (Steamed)
  • 1 large red bell pepper (Diced)
  • 1 small onion (Diced)
  • ¼  cup of ground kuli
  • 1 teaspoon yaji
  • 1 Bouillion cube (crushed)
  • Pinch of salt.


Preparation

  • Pick out the Moringha leaves.
  • Soak in salt water and rinse.
  • Place leaves in a pot, cover and steam with a cup of water till done.
  • Strain to remove excess water.
  • Put strained leaves into a bowl.
  • Add bell peppers, and onions. Toss.
  • Combine ground kuli, yaji, and crushed maggi cube.
  • Sprinkle over salad, and serve. Your delicious kwadon zogale is ready to eat!


Tips:
Kwadon zogale can be eaten on its own, or served as a side dish.
