Dan'wake (Bean dumpling) with spice infused oil

Dan'wake are a delicious treat from Northern Nigeria. They are made from a mixture of flour and cooked in water. It's usually eaten with yaji, oil, and seasoning, and thinking about it now brings so many fun childhood memories. So many people who either lived or grew up in the north can attest to a sudden craving for Dan'wake that can send you to the kitchen at odd hours to get a fix...lol!

Dan'wake can be eaten at breakfast, lunch, or anytime you're really hungry and need to cook up something real quick.

Ingredients

2 cups wheat flour

1/2 cup beans flour

1/2 cup cassava flour

2 tablespoons Kuka (baobab leaf) powder

1 cup of water

vegetable oil (2 cups)

1 medium onion (chopped)

chilli (crushed)

Yaji

Maggi seasoning cube (crushed)

Cucumber (chopped)

Tomatoes (chopped)

Boiled eggs (sliced)

 

Method

  • Bring 1.5 litre of water to boil in a large pot. Mix together the flours and kuka with the water in a bowl to form a thick paste. Using your fingers, begin to scoop batter into the pot of boiling water. Allow to cook uncovered for about 5 minutes. Dumplings will begin to rise to the surface of the boiling water. Let cook for a further 5 minutes. You can check for doneness at this point. Prepare a bowl of cool water. Using a slotted spoon, scoop dumplings into the cool water. This step stops the dumplings from sticking together. Drain using a colander.
  • To prepare the seasoning oil, heat vegetable oil in a saucepan. Add the chopped onions and sauté for 2 minutes. Turn heat off, and add crushed chilli pepper. Pour oil into a container or bottle. I usually make mine several days ahead in order to infuse the onion and chilli flavours into the oil. Note that the longer it stays, the more intense the flavour becomes.
  • To serve, scoop dumplings into a plate, arrange chopped cucumber and tomatoes by the side. Add boiled egg slices, sprinkle yaji, and seasoning over it. Then drizzle on some of the infused oil. Your Dan'wake is ready to eat!
